Salads

Caesar Salad
Romaine lettuce topped with grilled chicken breast, homemade croutons, shredded parmesan cheese, and a spicy low-fat Caesar dressing.
Greek Chicken Salad
Fresh salad greens with seasoned chicken breasts, tomatoes, red onion, cucumbers, and feta cheese. Dressed with red wine vinegar and oregano vinaigrette.
Taco Salad
A crisp flour tortilla bowl filled with your choice of seasoned ground beef, ground turkey or grilled chicken, black or pinto beans, lettuce, tomatoes, and cheese then topped with sour cream. Dressed with Honey Lime Vinaigrette.

Main Dishes

Poultry:

Chicken Marsala
Breast of chicken sautéed in a mushroom silky sweet marsala wine sauce.
Teriyaki Chicken
Chicken breasts or boneless thighs grilled and brushed with a sweet teriyaki glaze, with grilled pineapple slices.
Turkey Meatloaf

Garlic, ginger, cilantro and lemon juice with baked sweet potato fries

Seafood:

Baked Tilapia or Cod with a garlic, butter, and lemon sauce.
Fish Tacos Marinated or Grilled Fish (tilapia, mahi mahi, salmon) with shredded cabbage and avocado sauce in a corn or flour tortilla.
Panko Crusted Tilapia with a Lemon Garlic Butter Sauce with Herb Roasted New Potatoes
Grilled Honey-Mustard salmon with asparagus.

Soups & Stews:

Beef & Sweet Potato Stew
Meltingly tender chunks of beef with sweet potatoes, peas, and baby onions. Seasoned with a hint of cinnamon and allspice.
Southwestern Style Chili with turkey, black beans, sweet corn, and red peppers. Spiced with chili powder, cumin and coriander and served with homemade corn muffins.
Chicken and SmokedSausage Jambalaya
Chipotle Chicken or Turkey Chili
Diced Chicken or Turkey Breasts, pinto beans, roasted peppers in a smoky, spicy chili sauce.
